Cheese Production Expert - Food System Challenge – FSC
Scope of work and Deliverables
The Consultant is expected to fulfill the following in addition to any other task required:
- Advise on best practices for cheddar, mozzarella, and kashkaval cheese production.
- Conduct trials, mixture preparations to optimize taste, texture, and all appropriate ingredients.
- Assess the company’s current production line and advise on how to optimize the process, if needed.
- Assess product formulation and suggest improvement if needed.
- Advise on best storing, and packaging practices to increase product’s shelf life.
As part of the program’s Monitoring and Evaluation (ME&L) processes, the consultant is required to:
- Deliver a briefing report to the program’s team.
- Attending check-ins short meetings, if needed and required by the program’s team.
- Attending MEL induction meeting before the beginning of the session.
Qualifications
- Bachelor’s degree diploma in food or agro-food processing; MSc/MA is a plus.
- At least 10 years of experience in the dairy industry with proven experience of working in formulating and setting up production lines for cheddar, mozzarella, and kashkaval cheese.
- Proven experience in delivering trainings and training materials and in developing production lines.
- Excellent communications and report writing skills.
- Fluent in English and Arabic
Timeline and Application
The selected Consultant is expected to start his/her activities at the soonest after selection; the exact timeline and effective working days are to be set based on both the company’s and the Consultant’s availability. The total budget allocated for the intervention is within the range of USD 2,700– USD 3,000 within a minimum of 12 days of intervention.
Candidates should submit the following documents:
- Technical (maximum two pages) describing the methodology to conduct the work based on the content suggested in section: “Scope of Work, Outputs, and Deliverables” elaborating it further.
- Profile and project references (maximum two pages): A brief explanation of the consultant(s) background should be submitted (CVs shall be included as annex) along with project references on the topic.
- Financial Proposal describing the expected renumeration and the proposed timeframe of the intervention.
