Operations Manager - F&B
Company Description
Souk El Tayeb is a social enterprise founded in 2004 with the goal of improving the livelihood of small-scale farmers and producers while preserving Lebanese culinary traditions and rural heritage. The Souk El Tayeb family includes various establishments such as The Farmers' Market, Tawlet restaurants, Beit guest homes, Dekenet farmers' store, and Matbakh El Kell, which was created to provide food for those in need after the Beirut port explosion in August 4, 2020.
Main Tasks & responsibilities
Manage daily operations and staff across all outlets
Manage outlets’ staff (kitchen, service, cleaning…)
Ensure that their daily tasks are being fulfilled as well as their compliance with outlet and company standards
Manage orders and inventory
Supervise the purchasing (consumables, food & beverages…), following up on the new suppliers
Weekly Visits for all the outlets and close deals.
Opening and pre-opening of the outlets
Responsible for staff’s personal hygiene, appearance, and well-being
Provide constant leadership, counseling, advice, and feedback to team members
Establish targets, KPIs, schedules, policies, and procedures
Ensure consistent delivery of high-quality food, service & experience to customers
Supervise the daily tasks of the drivers
Coordinate F&B orders with the MEK team
Supervise & coordinate Catering Events & New Projects in collaboration with the Catering Manager and concerned Chef
Follow up with the Catering Manager on event quotations, logistics, and needed resources.
Review offers and proposals with the Catering manager, and support with negotiation, as needed
Follow up with the concerned chef on the planning and preparations for the catering event/service needs and equipment list…
Liaise with catering suppliers, in collaboration with the catering Manager & Chef to ensure all resources are available
Ensure customer satisfaction and handle complaints and issues, in collaboration with the catering manager.
Follow-up on payments and collection with Accounting and the catering manager
Manage Customer Relations
Ensure excellent customer experience – premises, staff, food…
Follow-up on customer inquiries, and needs – respond proactively
Set and ensure strict compliance with all relevant Hygiene and Safety requirements
Is involved in all planning associated with each event, right through to delivery
Manage Properties
Ensure all outlets under SET proper maintenance, hygiene, and sanitary standards as per set guidelines
Responsible for car papers and maintenance
Responsible for legal permits and legal documents
Responsible for managing Set Assets across all outlets and stocks
Hire and contract personnel to repair or replace broken items or infrastructure
Check contractor work and ensure it is up to standard
Finance and Reporting
Forecast, plan, and manage all F&B orders, staff, and finance
Set financial goals to maximize sales & revenues, and develop budgets in collaboration with MPs, chefs & managers
Follow up on cost control reporting analyze monthly cost control reports and provide recommendations
Responsible for reaching yearly financial targets set by the company management
Manage and monitor expenditures associated with all equipment repair
Analyze with accounting/finance monthly P&L – provide Analysis and recommendations
Send daily/weekly/monthly reports to concerned team members
International development in F&B
Oversight of international operations/Opening new Tawlet abroad, franchising…
Responsible for documenting and setting development policies and procedures
Follow up on the implementation of Set policies and procedures
